Formaggio marinato – goats cheese marinated with herbs

Round forms of goats cheese.  Heat 1/2 cup extra virgin olive oil, 4 cloves garlic, 1 bay leaf, thyme, origano, slightly crushed black pepper, coriandolo, parsley & some chilli pepper. The oil should not reach frying point but must be hot.
Cool. Place the cheese in a terracotta bowl and cover completlely with the oil. Leave to marinte for 24 hours.
Eat within two days.
