Farro or Spelt salad

Spelt or farro is a delicious grain to give you a boost of in your salad. Just prepare it when you have time and keep in a plastic box with a lid in the fridge.(not more than 4 days).

Take 1,1/2 cup farro and keep in water in the fridge overnight. Cook in salted water for about 20′. Drain and store. You can add this to any salad of your choice. It is a source of vitamin B2,  manganse, and niacin, thiamin, and copper.I even sometimes add it to vegetable frittata.
