Coconut and Orange Cake

175 gr freshly grated coconut wet slightly)
grated rind of 1 bio orange
175gr flour
1/4 tbsn baking pdr
pinch salt
100gr butter
125gr cane sugar
1 tspn liquid vanilla essence
1 egg if possible large
milk
1 tbn aniseed.

Grate coconut and add grated orange rind. Oven 185°gr. Butter a cake tin, dusting with flower. Sift flour, bkng pdr and salt. Cream butter and sugar adding vanilla and egg and beat till smooth. Add dry ingredients in stages with the milk. Beat and stir in coconut and orange. Put into prepared cake tin and level the batter. Bake for 25 mins. Cool and place on serving dish.
